
Chorizo and Prawn Orzo

Try this simple orzo recipe with chorizo and prawns for a speedy twist on a classic Spanish paella. Orzo is a small Italian pasta shaped similar to a long, fat grain of rice. You can use it in place of rice in risottos, salads and your favourite pasta dishes, as well as here in a cheat’s paella. In this recipe we’ve added crispy chorizo, juicy prawns and sweet roasted baby tomatoes. Ready in 35 minutes, this is an ideal, flavourful midweek meal to serve the family. Ingredients
- 325 g of baby plum tomatoes
- 3 tsp of oil
- 1 tsp of balsamic vinegar
- 250 g of chorizo, diced
- 1 red onion, diced
- 3 garlic cloves, chopped
- 1 green chilli, diced
- 500 ml of chicken stock
- 350 g of orzo
- 165 g of raw king prawns
- 1 small bunch parsley, chopped
Method
Step 1
Preheat the oven to 220°C/200°C fan/gas 7. Place the tomatoes onto a baking tray and drizzle over 1 tsp oil, vinegar and some seasoning. Roast for 10 mins.Step 2
Into a large frying pan over a high heat add 1 tsp oil and diced chorizo. Fry for 2-3 mins until turning crispy.Step 3
Add the onion, garlic and chilli and fry for a further 2 mins. Stir through the chicken stock then add in the orzo. Bring to the boil then simmer for 10-12 mins or until the orzo is cooked but still al dente and the stock is fully absorbed. Add more water if the orzo isn’t cooked to your liking and needs a little longer.Step 4
While the orzo simmers, add the prawns to a separate frying pan with the remaining oil and fry for a couple of mins until they turn pink and are cooked through. Add to the orzo pan along with the roasted tomatoes and gently stir to combine.Step 5
Add the chopped basil and some seasoning, cook for a minute more, then serve.
