
Chorizo in Red Wine

A simple Spanish tapas dish that's delicious as part of a sharing feast. Chorizo sausage is fried together with garlic, onion, smoked paprika and red wine for a rich, deep flavour. Add olives, bread, garlic prawns and padron peppers to the table to complete the meal. Time and servings

Ingredients
- 150 ml of red wine
- 2 tbsp of olive oil
- 0.5 red onion, chopped
- 2 cloves of garlic, sliced
- 1 tsp of smoked paprika
- 250 g of cooking chorizo, chopped into 2cm rounds
Method
Step 1
Heat the olive oil in a frying pan on a medium heat, and fry the onion and garlic until softened.Step 2
Add the chorizo and cook for 2-3 mins, then stir in the paprika and cook for a further 1 min.Step 3
Add the wine and simmer until it has reduced to a thick, rich sauce. Serve with crusty bread.
