
Chorizo Peas

This Spanish-inspired side dish offers a yummy new way to serve peas. A hit of piquant paprika contrasts well with their sweetness and gives great depth of flavour.Time and servings

Ingredients
- 75 g of chorizo, sliced
- 1 yellow pepper, deseeded and chopped
- 400 g of peas
Method
Step 1
Place a frying pan over a moderate heat, add the chorizo and cook, stirring from time to time, until it starts to release its oil.Step 2
Add the chopped pepper and continue to cook until the chorizo is crisp in places and the pepper is softened.Step 3
Cook the peas in boiling water until just tender, then drain thoroughly and add to the pan with chorizo and peppers. Stir to mix and serve.
