
Chorizo Quesadilla

These fuss-free tortillas, filled with cheese, chorizo, spring onion, chilli and coriander will go down well with a nice cold beer. Make a few rounds to keep your friends happy – they only take about five minutes to throw together. They're great for dipping too, so try serving with guacamole and salsa for an extra hit of flavour. Ingredients
- 1 tsp of olive oil
- 2 large tortilla wraps
- 2 handfuls of cheddar, grated
- 6 slices of chorizo
- 1 spring onion, sliced (optional)
- 1 handful of coriander leaves, picked (optional)
Method
Step 1
Heat the oil in a large frying pan and add a large tortilla wrap.Step 2
Cover with grated cheddar and thin slices of chorizo, evenly spaced. Sprinkle with spring onion, chilli, coriander (if using) and a little more cheese. Place the other wrap on top, pressing gently.Step 3
Cook for 3 mins, until golden. Carefully turn over and cook for 2-3 mins more until the other side is golden and the cheese is melted.Step 4
Remove from the pan and cut into 6 before serving.
