
Chorizo stuffed apples

Soft, caramelised baked apple, sage and spicy chorizo make a

Ingredients
- 6 red apples, (discovery or braeburn work well)
- 100 g of cooking chorizo, meat removed from the skins
- 30 g of fresh breadcrumbs
- 1 tsp of dried sage
- 2 tbsp of olive oil
Method
Step 1
Cut the tops off the apples and, using a sharp knife or melon baller, cut out the core (but leave some apple on the bottom). Discard the core, but keep the tops.Step 2
Mix the chorizo, breadcrumbs, sage and some seasoning in a bowl, you’ll need to squish it all together with your hands. Divide the stuffing between the apples and pop on the tops.Step 3
Heat the oven to 200°C/180°C fan/gas 6. Pop the apples in a roasting tin, or add to the pork in the roasting tin, drizzle with oil and cook for 20-25 mins. Serve with the pork.
