
Christmas Panettone Eggy Bread with Spiced Fruit Compote

Ingredients
- 150ml apple juice
- 1 Bramley apple, peeled, cored and diced
- 2 Braeburn apples, peeled, cored and diced
- 2 tbsp brandy
- 1 tsp ground mixed spice
- 4 tbsp dark brown soft sugar
- 2 tsp vanilla paste
- 50g M&S Brandy-soaked mixed fruit
- 2 large free-range eggs
- 100ml single cream
- ½ M&S panettone, cut into 4 wedges
- 45g butter, to cook
- 500g tub vanilla ice cream, to serve
- 2 tbsp icing sugar, to serve
Method
Step 1
For the spiced fruit compote, pour the apple juice into a small saucepan and bring up to a simmer. Add the apples, brandy, mixed spice, sugar and 1 tsp vanilla paste to the pan. Set over a medium heat and simmer gently for 5-8 mins. Add the brandy-soaked fruits and cook again for another 5 mins or until all the fruit is tender. Remove from the heat and set aside.Step 2
Crack the eggs into a shallow dish and add the remaining 1 tsp vanilla paste and cream. Whisk well until combined. Dip the panettone wedges into the custard mix and turn over until soaked on all sides. Transfer to a plate or tray and repeat with the remaining panettone wedges.Step 3
Heat half the butter in a large non-stick frying pan over a medium heat. When the butter is foaming, add 2 of the soaked panettone wedges to the pan and cook for 2-3 mins on each side, or until golden brown. Remove and repeat with the remaining butter and panettone wedges.Step 4
Serve each wedge with a spoonful of spiced fruit compote, scoop of ice cream and a liberal dusting of icing sugar.
