
Christmas Pudding Ice Cream

Everyone will love this Christmas pudding ice cream, and it's a great way to use up those festive leftovers. Serve it alongside frozen berries, as we have, or get creative with candied orange peel and chocolate chips. You can enjoy this recipe straight away or store in the freezer for later.Time and servings

Ingredients
- 100 g of christmas pudding (fruit cake also works well), leftovers
- 500 ml of vanilla ice cream
- 1 handful of frozen berries, to serve
Method
Step 1
Roughly chop your leftover Christmas pudding into 1cm cubes.Step 2
Take the vanilla ice cream from the freezer and let it thaw slightly for 2 mins to soften. In a bowl, gently stir the Christmas pudding chunks into the ice cream taking care not to break them up too much.Step 3
Serve right away topped with frozen berries, or place in a container and put back in the freezer for later.
