
Christmas Rosti

It's the classic crisp potato rosti you know and love, but we've given it a festive lift. Topped with a dollop of horseradish-spiked crème fraîche, smoked salmon and fresh chives, it’s a simple yet elegant dish that’s perfect for a special breakfast or light lunch over the Christmas period.Time and servings

Ingredients
- 400g maris piper potatoes
- 3 tbsp olive oil
- 75g crème fraîche
- 1 tsp creamed horseradish
- 100g smoked salmon, we used M&S Collection Wild Alaskan Smoked Salmon
- 10g chives, finely chopped
Method
Step 1
Coarsely grate the potatoes (leaving the skin on). Place the grated potato in the middle of a clean tea towel, gather the sides and squeeze out as much liquid as possible over a sink. This is the key to a crisp rosti. Tip the dry potato into a bowl and season well with salt and pepper.Step 2
Place a large non-stick pan over a medium heat and add the olive oil. Add the potato mixture to the pan and press down firmly with the back of a spoon to flatten it into one large round.Step 3
Fry for 5-8 mins on each side, or until deeply golden, crisp and cooked through.Step 4
Meanwhile, in a small bowl, mix the crème fraîche and creamed horseradish. Season with a little salt and pepper.Step 5
To serve, transfer the rosti to a serving board. Top with the horseradish cream, followed by the smoked salmon. Scatter over the chives to finish, then cut into slices to serve.
