Christmas Sherry Trifle

For a fabulous Christmas trifle layer some sponge fingers with raspberry jam and fresh strawberries, sprinkle over some sherry and then add a Raspberry Jelly, custard and cream. Top it all off with some fresh strawberries and toasted almonds for a truly special Christmas dessert.

Ingredients

  • 2 tbsp of raspberry jam
  • 10 trifle sponge fingers
  • 2 tbsp of sweet sherry
  • 150 ml of cream
  • 2 tbsp of flaked almonds
  • 150 g of strawberries
  • 135 g of hartleys raspberry jelly
  • 425 g of ambrosia canned custard

Method

  • Step 1

    Spread raspberry jam over the spoon fingers then place the sponge into the base of a glass bowl in layers with the fresh starwberries.
  • Step 2

    Sprinkle the sherry over the sponge fingers and leave to soak for five minutes.
  • Step 3

    Meanwhile make up the Hartley’s Jelly following the pack instructions and allow to cool then pour over the trifle sponges until they are just covered.
  • Step 4

    Transfer the jelly to the fridge to set.
  • Step 5

    When the jelly is set spread a layer of custard over and then top with the whipped cream.
  • Step 6

    Decorate with the reserved strawberries and toasted almonds then return to the fridge and chill for at least 30 minutes prior to serving.
