
Christmas Tree Gin and Tonic

Give your G&T some fun festive vibes by infusing gin with the scent of pine from your Christmas tree. Bar owner and consultant Ryan Chetiyawardana – aka Mr Lyan – created this clever Christmas Tree Gin and Tonic. The recipe makes a 70cl bottle of pine-infused gin, which you can use as the base for around 10 drinks. It makes an original gift or bring-a-bottle too – just attach a homemade label.Time and servings

Ingredients
- 500ml dry gin
- 200ml elderflower cordial
- 150ml tonic water (approx.)
- 1 lemon slice, to garnish
Method
Step 1
Take a 10 cm (approx.) pine sprig from your Christmas tree, wash and dry it and put it in a large jug with the gin. Leave to infuse in the fridge for 24 hrs.Step 2
Strain the gin through a sieve into a clean jug. Add the elderflower cordial and bitters; stir well. Decant into a clean 70cl bottle and seal; store chilled.Step 3
To make the G&T, add 70ml of the gin mix to a highball glass filled with ice cubes; stir, add more ice, then top up with tonic water. Garnish with a small pine sprig from your tree that has been washed and dried, and the lemon slice.Step 4
