
Ciabatta Pizza with Prosciutto, Sundried Tomato and Rocket

With just six ingredients and taking less than 15 minutes to rustle up, this throw-together pizza is a real winner for a speedy lunch or easy nibble when you have friends over. Experiment with different toppings if you like – swap the prosciutto for sliced olives for a veggie version, for instance. Time and servings

Ingredients
- 2 plain half ciabattas
- 1 handful of cherry tomatoes, halved
- 200 g of mozzarella, torn
- 4 slices of prosciutto, torn
- 1 handful of rocket
- 1 squeeze of sundried tomato paste
Method
Step 1
Preheat grill to medium. Slice the ciabattas in half lengthways and spread the cut side with a generous amount of sundried tomato paste.Step 2
Top with the torn up mozzarella and cherry tomatoes.Step 3
Place under the grill for 10 mins until the mozzarella has melted.Step 4
Top with prosciutto and rocket before serving.
