
Clementine Compote and Yoghurt

If the citrus fruit has been untouched in favour of chocolate over Christmas, pop it in a saucepan until sweet and sticky to make a compote – it'll keep longer in the fridge that way. Serve with creamy yoghurt and nuts for a quick, light and fuss-free dessert over the festive season. Ideal for when you have guests over. Time and servings

Ingredients
- 7 clementines
- 1 handful of pistachios (optional)
- 1 pinch of thyme (optional)
- 400 g of greek yoghurt (or coconut yoghurt)
- 2 tbsp of honey
Method
Step 1
Place the peeled clementine segments in a saucepan, taking any big pieces of pith off as you go.Step 2
Heat the pan to medium-low and add the honey and thyme, if you’re using it. Gently simmer until the fruit breaks down to a jam-like consistency – around 10 mins.Step 3
Leave to cool, divide the yogurt between your bowls and swirl the compote through each to serve. Top with toasted chopped pistachios and an extra drizzle of honey, if you like.
