Ingredients
- 3 large egg whites
- 2.5 tbsp caster sugar
- 1.5 tbsp cornflour
- 0.5 tsp orange blossom water (or use vanilla extract)
- 3 drops(approx.) pink food colouring
Method
Step 1
Preheat the oven to 160°C/140°C fan/gas 3 and line a baking tray.Step 2
In a mixing bowl, beat the egg whites with an electric whisk to stiff peaks. Gradually add the caster sugar, beating well after each addition until combined, then whisk in the cornflour.Step 3
Working quickly, add the orange blossom water or vanilla extract and whisk until the mixture returns to stiff peaks. Spoon half the mixture onto one side of the lined baking tray and shape into a smooth, 10-12 cm mound using a spatula. Whisk in a few drops of pink food colouring gel to the remaining mixture; shape on the baking tray.Step 4
Bake for 25 mins until lightly golden. Leave for a few mins until cool enough to handle, then gently lift from the baking paper. Best torn, rather than sliced.
