
Cocktail Sausage Slaw

Ingredients
- ½ small white or green cabbage, finely shredded
- 1 large carrot, peeled into ribbons or grated
- 1 red chilli, deseeded and finely diced (optional)
- 4 salad onions, halved and finely sliced lengthways
- 40g radishes, quartered
- 80g sliced stringless runner beans
- 1 lime, ½ juiced, plus an extra squeeze
- 3 tbsp soy sauce
- 2 tbsp toasted sesame oil
- 1 tbsp rice vinegar or white wine vinegar
- 2 tbsp runny honey
- 1 (195g) tin sweetcorn, drained
- 1 (400g) tin butter beans, drained
- 12 cherry tomatoes, halved
- 300g cooked cocktail sausages
- 1 tbsp toasted sesame seeds
- 1 small handful coriander, chopped (optional)
Method
Step 1
Place the cabbage, carrot, chilli (if using), salad onions, radishes and runner beans in a large bowl. Season and squeeze over the juice of ½ lime. Mix well and set aside for 5-10 mins.Step 2
Meanwhile, in a jug, mix together the soy sauce, sesame oil, rice vinegar or white wine vinegar, runny honey and the extra squeeze of lime with some seasoning.Step 3
Add the sweetcorn, butter beans, tomatoes and sausages to the slaw mixture. Pour over the dressing and toss to combine.Step 4
Serve sprinkled with the sesame seeds and the coriander, if using.
