Ingredients

  • ½ small white or green cabbage, finely shredded
  • 1 large carrot, peeled into ribbons or grated
  • 1 red chilli, deseeded and finely diced (optional)
  • 4 salad onions, halved and finely sliced lengthways
  • 40g radishes, quartered
  • 80g sliced stringless runner beans
  • 1 lime, ½ juiced, plus an extra squeeze
  • 3 tbsp soy sauce
  • 2 tbsp toasted sesame oil
  • 1 tbsp rice vinegar or white wine vinegar
  • 2 tbsp runny honey
  • 1 (195g) tin sweetcorn, drained
  • 1 (400g) tin butter beans, drained
  • 12 cherry tomatoes, halved
  • 300g cooked cocktail sausages
  • 1 tbsp toasted sesame seeds
  • 1 small handful coriander, chopped (optional)

Method

  • Step 1

    Place the cabbage, carrot, chilli (if using), salad onions, radishes and runner beans in a large bowl. Season and squeeze over the juice of ½ lime. Mix well and set aside for 5-10 mins.
  • Step 2

    Meanwhile, in a jug, mix together the soy sauce, sesame oil, rice vinegar or white wine vinegar, runny honey and the extra squeeze of lime with some seasoning.
  • Step 3

    Add the sweetcorn, butter beans, tomatoes and sausages to the slaw mixture. Pour over the dressing and toss to combine.
  • Step 4

    Serve sprinkled with the sesame seeds and the coriander, if using.
