Ingredients

  • 30g almonds
  • 40g chia seeds, plus extra to coat (optional)
  • 60g almond butter
  • 25g desiccated coconut, plus extra to coat (optional)
  • 180g pitted dates, soaked in a bowl of boiling water for 10 mins to soften, then drained (reserve the liquid)

Method

  • Step 1

    In a food processor, pulse the almonds until finely chopped. Add the 40g chia seeds, almond butter, 25g desiccated coconut, softened dates and 2 tbsp of the reserved soaking liquid. Blitz to a thick, sticky paste, adding more liquid if needed.
  • Step 2

    Scoop the date mix with a teaspoon and shape into balls; if you like, roll them in a mixture of coconut and chia seeds to coat. Freeze for 30 mins to firm up.
