Coconut Overnight Oats

A nutritious breakfast that requires zero fuss. Make your life easier in the morning by whipping up this recipe the night before and leaving it in a jam jar, tub or pot in the fridge. Then you can simply grab it as you leave for work the next day. Just try not to look too smug in front of your colleagues when you tuck in.

Ingredients

  • 40 g of rolled porridge oats
  • 20 g of sultanas
  • 150 ml of coconut milk
  • 1 ripe conference pear, peeled, cored and grated
  • 10 g of desiccated coconut
  • 0.5 tsp of ground cinnamon, to taste
  • 20 g of raisins
  • 1 handful of coconut flakes, toasted, to serve

Method

  • Step 1

    Simply add all the dry ingredients (except the coconut flakes) to your container and give it a quick mix.
  • Step 2

    Pour in the coconut milk and stir well.
  • Step 3

    Add the grated pear and stir again – make sure it’s well integrated to stop it browning.
  • Step 4

    Pop the lid on and place in the fridge overnight.
  • Step 5

    Before serving, top with toasted coconut flakes for crunch. If the oats are a little thick in the morning, just add a bit more coconut milk to loosen.
