Ingredients
- 2 cod fillets
- 2 tbsp plain flour
- 2 tbsp extra-virgin olive oil
- 40g salted butter, cut into 4 cubes
- 35g capers, drained
- 100ml dry white wine
- ½ lemon, juiced
- 1 small handful flat-leaf parsley, roughly chopped
Method
Step 1
Season the cod and dust in flour on both sides. Shake off the excess.Step 2
Heat the oil and 1 cube of butter in a frying pan over medium heat. Fry the fish for 2-3 mins on each side until golden and cooked through. Set aside on warm plates.Step 3
In the same pan, melt 2 cubes of butter until bubbling. Stir in the capers, cook for 1-2 mins, then add the wine. Simmer for 3 mins, until reduced slightly, then add the lemon juice, most of the parsley and a pinch of salt. Stir in the remaining butter to thicken the sauce.Step 4
Spoon the sauce over the fish, scatter with the remaining parsley and eat immediately.
