
Cod with Lemon Herb Crust

Ingredients
- 4 cod fillets
- 1 medium of egg, lightly beaten
- 2 tbsp of parmigiano reggiano, grated
- 1 lemon, finely grated
- 4 tbsp of breadcrumbs
- 1 tbsp of flat-leaf parsley, fresh chopped
- 1 tsp of thyme, fresh chopped
Method
Step 1
In a bowl combine the breadcrumbs, parmesan, fresh herbs and lemon rind. In a second bowl add the egg, lightly beaten.Step 2
Place the fish first in the egg (ensure it is covered all over) and then coat in the breadcrumbs. Transfer to a lightly oiled baking dish and place in the oven for 10 minutes until starting to brown. Serve immediately with fresh vegetables
