Ingredients

  • 4 cod fillets
  • 1 medium of egg, lightly beaten
  • 2 tbsp of parmigiano reggiano, grated
  • 1 lemon, finely grated
  • 4 tbsp of breadcrumbs
  • 1 tbsp of flat-leaf parsley, fresh chopped
  • 1 tsp of thyme, fresh chopped

Method

  • Step 1

    In a bowl combine the breadcrumbs, parmesan, fresh herbs and lemon rind. In a second bowl add the egg, lightly beaten.
  • Step 2

    Place the fish first in the egg (ensure it is covered all over) and then coat in the breadcrumbs. Transfer to a lightly oiled baking dish and place in the oven for 10 minutes until starting to brown. Serve immediately with fresh vegetables
