Ingredients
- 2 fillets of cod
- 8 slices of parma ham
- 4 tsp of green pesto
- 120 g of cherry tomatoes
- 2 sprigs of rosemary
- 6 garlic cloves
- 100 ml of olive oil
Method
Step 1
Preheat oven to 200°C/Gas Mark 6Step 2
Place the garlic slivers in an oven proof dish together with the cherry tomatoes and sprigs of rosemary.Step 3
Season with sea salt, cracked black pepper, then poor olive oil all over. Cook on a medium heat for about 15 minutes.Step 4
On a chopping board, lay flat 4 slices of parma ham. Place the fish fillet on top of the parma ham, brush the fish with green pesto (be generous) and wrap it in the parma ham.Step 5
Oil the baking tray and bake for 15/20 minutes.Step 6
To serve - place the roasted cod onto a plate, spoon on tomato confit, then pour the remaining cooking juice over the top. Serve with dressed rocket salad.
