Ingredients

  • 2 fillets of cod
  • 8 slices of parma ham
  • 4 tsp of green pesto
  • 120 g of cherry tomatoes
  • 2 sprigs of rosemary
  • 6 garlic cloves
  • 100 ml of olive oil

Method

  • Step 1

    Preheat oven to 200°C/Gas Mark 6
  • Step 2

    Place the garlic slivers in an oven proof dish together with the cherry tomatoes and sprigs of rosemary.
  • Step 3

    Season with sea salt, cracked black pepper, then poor olive oil all over. Cook on a medium heat for about 15 minutes.
  • Step 4

    On a chopping board, lay flat 4 slices of parma ham. Place the fish fillet on top of the parma ham, brush the fish with green pesto (be generous) and wrap it in the parma ham.
  • Step 5

    Oil the baking tray and bake for 15/20 minutes.
  • Step 6

    To serve - place the roasted cod onto a plate, spoon on tomato confit, then pour the remaining cooking juice over the top. Serve with dressed rocket salad.
