Ingredients
- 100 g of coffee ice cream
- 8 coconut macaroons, or biscuits
- 25 g of pistachio nuts, shelled and finely chopped
Method
Step 1
Place 4 up-turned biscuits on a baking tray.Step 2
Scoop the Carte D’Or Caffe Latte Ice Cream into a bowl and stir in 4/5ths of the chopped pistachio nuts.Step 3
Spoon the ice cream mix onto each up turned biscuit. Smooth out to flatten and neaten the edges to match each biscuit shape.Step 4
Top with the remaining biscuit, press down lightly. Return to the freezer for 10 minutes.Step 5
Serve!
