
Cold soba and cucumber salad with miso dressing

Ingredients
- 1.5 tsp of sesame oil, for the dressing
- 60 g of soba noodles
- 1 pinch of pickled ginger, finely sliced
- 1.5 tsp of white miso, for the dressing
- 1.5 tsp of rice wine vinegar, for the dressing
- 1 salmon fillet, cooked
- 1 pinch of shichimi togarashi
- 0.5 cucumber, peeled, deseeded and cut into bite-sized pieces
- 1 handful of coriander
Method
Step 1
Cook the noodles in plenty of boiling water for 3 mins, stirring from time to time to stop them from sticking. Once tender, drain and run under cold water.Step 2
Toss the noodles with the cucumber, coriander and pickled ginger. Mix the dressing together. Season to taste.Step 3
Top the salad with the salmon and pour over the dressing. Serve with a pinch of shichimi togarashi.
