Cold soba and cucumber salad with miso dressing

Ingredients

  • 1.5 tsp of sesame oil, for the dressing
  • 60 g of soba noodles
  • 1 pinch of pickled ginger, finely sliced
  • 1.5 tsp of white miso, for the dressing
  • 1.5 tsp of rice wine vinegar, for the dressing
  • 1 salmon fillet, cooked
  • 1 pinch of shichimi togarashi
  • 0.5 cucumber, peeled, deseeded and cut into bite-sized pieces
  • 1 handful of coriander

Method

  • Step 1

    Cook the noodles in plenty of boiling water for 3 mins, stirring from time to time to stop them from sticking. Once tender, drain and run under cold water.
  • Step 2

    Toss the noodles with the cucumber, coriander and pickled ginger. Mix the dressing together. Season to taste.
  • Step 3

    Top the salad with the salmon and pour over the dressing. Serve with a pinch of shichimi togarashi.
