
Confetti Macaroons

Little ones will love these super-easy, crisp and chewy Confetti Macaroons, made with coconut and ground almonds and created by OcadoLife food editor Lauren Hoffman. Be as creative as you like with the decorations – anything goes!Time and servings

Ingredients
- 2 large egg whites
- 125g caster sugar
- 1 tsp vanilla extract
- 125g desiccated coconut
- 50g ground almonds
- 2 tbsp mixed sprinkles, plus extra to decorate (optional)
- 4 tbsp dark chocolate (and/or use milk and white chocolate), melted, to decorate (optional)
Method
Step 1
Preheat the oven to 180°/160°C fan/gas 3. Line 2 baking sheets with baking paper. In a clean bowl, beat the egg whites with a pinch of salt for 2-3 mins until soft peaks form. Add the sugar and vanilla; whisk for 1-2 mins until combined.Step 2
Fold in the coconut and almonds with a spatula until just combined. Fold in the sprinkles, if using.Step 3
Use a coffee scoop or tablespoon to dollop around 18 mounds of mixture onto the trays. Bake for 15-20 mins, until just starting to turn pale golden. Remove; leave to cool and harden on the trays.Step 4
Decorate the cooled macaroons with melted chocolate and extra sprinkles, if you like; leave to set at room temperature. Store in an airtight container for 3-5 days.
