We love Confit Tomatoes! They couldn’t be easier to make and go with almost anything. Serve spooned over sourdough spread with ricotta, as a colourful addition to classic Turkish eggs or stirred through orzo for a simple summer salad.

Ingredients

  • 4 x 300g tomatoes
  • 1 garlic bulb, halved horizontally
  • 400ml olive oil

Method

  • Step 1

    Heat the oven to 120°C/ 100°C fan/ gas ½.
  • Step 2

    Tip the tomatoes over the base of a roasting tray so that they fit snugly, add the garlic halves then pour over the oil to almost cover.
  • Step 3

    Roast the tomatoes for 1 hour until soft through, set aside to cool then decant into an airtight container making sure the top of the tomatoes are fully covered with oil. Keep in the fridge for up to 2 weeks.
