
Coriander Chutney

Coriander chutney is a popular Indian condiment that's vibrant, fresh-tasting and really versatile. As well as being great as a dip for foods from the Subcontinent like bhajis, samosas and poppadoms, it's also delicious for dunking veggies or sausage rolls into, as well as drizzling over tarts and frittatas. Ingredients
- 1 lemon, juice only
- 6 jalapeno peppers (or you can use green chilies)
- 2 garlic cloves, chopped
- 1 bunch of fresh coriander, roughly chopped
- 0.5 bunch of fresh parsley, roughly chopped
- 0.5 tsp of ground cumin
- 0.5 tsp of ground coriander
- 6 tbsp of extra virgin olive oil
Method
Step 1
Remove the jalapeño seeds if you want a milder dip (you can always keep them to one side to add after tasting). Place the jalapeños, garlic, coriander, parsley and spices into a food processor and whizz together until finely chopped.Step 2
Drizzle in the olive oil and blend again until the sauce is nice and smooth.Step 3
Season, adding the lemon juice to taste, and stirring thoroughly. Leave to chill in the fridge until needed.
