
Costa Coffee Panna Cotta

These creamy coffee-flavoured panna cottas are made using just three ingredients including convenient tins of Costa Latte. They are quick and easy to prepare but impressive on the plate, especially when served with a scattering of Amaretti biscuit crumbs or your choice of ripe berries or juicy fruit. Time and servings

Ingredients
- 1 tbsp of sunflower oil, for the ramekins
- 4 costa latte
- 300 ml of double cream
- 6 sheets of leaf gelatine
- 6 amaretti biscuits
Method
Step 1
Lightly grease 8 ramekins or dariole moulds with sunflower oil and set aside.Step 2
Pour the Costa Caramel Lattes and double cream into a deep, heavy-based pan over a low heat and gently warm until just steaming, then remove from the heat.Step 3
Remove the gelatine from the water and squeeze out any excess water. Add to the pan and gently stir until the sheets have fully dissolved.Step 4
Strain the mixture through a sieve into a large jug and divide between the prepared ramekins or dariole moulds. Leave to set in the fridge for 4 hrs, or ideally overnight.Step 5
To serve, carefully and briefly dip each ramekin into a dish of warm water then turn them out onto individual serving plates. Serve immediately with the amaretti biscuits crumbled on top and cream on the side, if you like.
