Ingredients
- 2 courgettes, sliced
- 1 tbsp olive oil
- 1 (570g) tin white beans, drained and rinsed
- ½ red onion, diced
- 1 tbsp red wine vinegar
- 2 heaped tbsp fresh pesto
Method
Step 1
Preheat a griddle or frying pan on medium-high. Toss the courgettes with olive oil and a little seasoning, then cook in batches until softened and golden.Step 2
Toss with the white beans, red onion, vinegar and pesto.
