Courgette Salad

With summer right around the corner, this simple griddled courgette salad will be your go-to side dish option at your next barbecue. Courgette is thinly sliced, coated in a sweet and spicy harissa marinade then lightly grilled to perfection. Served on a bed of wild rocket and garnished with toasted pine nuts and feta - it’s the perfect summer side salad.

Ingredients

  • 2 olive oil
  • 1 tbsp of harissa
  • 1 tbsp of honey
  • 2 large courgettes, cut into thin slices lengthways
  • 30 g of pine nuts
  • 30 g of wild rocket
  • 2 tbsp of balsamic vinegar
  • 1 lemon, juiced
  • 60 g of feta cheese

Method

  • Step 1

    n a mixing bowl, add the olive oil, harissa, honey, 1 tsp sea salt and ½ tsp coarse black pepper and mix together.
  • Step 2

    Pour the glaze over the courgette slices, ensuring all slices are evenly coated, then add the slices 4 to 6 at a time to a hot frying pan (we used a griddle pan). Fry for 2 mins on each side, repeating the process until all slices have been cooked until lightly charred.
  • Step 3

    In a separate frying pan, dry toast the pine nuts over a high heat for 2 mins then set aside.
  • Step 4

    dd a handful of fresh wild rocket to a large serving plate then pile your griddled courgette on top. Garnish with the toasted pine nuts, balsamic vinegar and a squeeze of lemon. Crumble the feta on top and serve.
