
Courgetti Bolognese

Look away traditionalists... ‘Courgetti Bolognese’ is here. A low-carb, speedy twist on the classic spaghetti bolognese. This veg packed version is delicious for a lighter meal, or why not try with half spaghetti and half courgetti?Time and servings

Ingredients
- 4 tbsp olive oil
- 1 stick celery, finely chopped
- 2 carrots, finely chopped
- 250g beef mince
- 500g Dolmio Bolognese Original Sauce
- 4 courgettes, spiralised (about 720g) or buy pre-spiralised
- 4 tbsp grated parmesan (optional)
Method
Step 1
Set a large frying pan over a medium heat, add 2 tbsp olive oil and the veg. Fry for 5 mins, until beginning to soften.Step 2
Increase the heat slightly then add the beef and fry for a further 5 mins, until browned.Step 3
Stir through the Dolmio Bolognese Original Sauce, bring to a simmer then reduce the heat to low and cook for 20 mins.Step 4
Meanwhile, if you are making the courgetti- use a spiraliser to make courgetti. Heat the remaining 2 tbsp oil in a separate frying pan over a high heat and cook the courgette for 2-3 mins until just softened.Step 5
Divide the courgetti between bowls and top with bolognese. Serve with freshly grated black pepper and grated parmesan, if you like.
