Courgetti Bolognese

Look away traditionalists... ‘Courgetti Bolognese’ is here. A low-carb, speedy twist on the classic spaghetti bolognese. This veg packed version is delicious for a lighter meal, or why not try with half spaghetti and half courgetti?

Ingredients

  • 4 tbsp olive oil
  • 1 stick celery, finely chopped
  • 2 carrots, finely chopped
  • 250g beef mince
  • 500g Dolmio Bolognese Original Sauce
  • 4 courgettes, spiralised (about 720g) or buy pre-spiralised
  • 4 tbsp grated parmesan (optional)

Method

  • Step 1

    Set a large frying pan over a medium heat, add 2 tbsp olive oil and the veg. Fry for 5 mins, until beginning to soften.
  • Step 2

    Increase the heat slightly then add the beef and fry for a further 5 mins, until browned.
  • Step 3

    Stir through the Dolmio Bolognese Original Sauce, bring to a simmer then reduce the heat to low and cook for 20 mins.
  • Step 4

    Meanwhile, if you are making the courgetti- use a spiraliser to make courgetti. Heat the remaining 2 tbsp oil in a separate frying pan over a high heat and cook the courgette for 2-3 mins until just softened.
  • Step 5

    Divide the courgetti between bowls and top with bolognese. Serve with freshly grated black pepper and grated parmesan, if you like.
