Ingredients

  • 3 tbsp extra-virgin olive oil
  • 1 lemon, zested and juiced
  • 3 courgettes, spiralised
  • 1 handful flat-leaf parsley, chopped
  • 50g seed salad topper
  • 1 (80g) bag sea salt and black pepper croutons

Method

  • Step 1

    In a serving bowl, whisk together the oil, lemon zest and juice and some seasoning.
  • Step 2

    Toss through the courgette and parsley, followed by the seeds and croutons. Serve immediately.
