Salad – a deliciously fresh-tasting way to enjoy courgettes. “This vegan recipe is so simple

Ingredients
- 3 tbsp extra-virgin olive oil
- 1 lemon, zested and juiced
- 3 courgettes, spiralised
- 1 handful flat-leaf parsley, chopped
- 50g seed salad topper
- 1 (80g) bag sea salt and black pepper croutons
Method
Step 1
In a serving bowl, whisk together the oil, lemon zest and juice and some seasoning.Step 2
Toss through the courgette and parsley, followed by the seeds and croutons. Serve immediately.
