
Crab and Celeriac Remoulade on Chicory

Ingredients
- 1 lemon, juiced
- 2 tbsp of dijon mustard
- 4 tbsp of mayonnaise
- 0.25 tsp of cayenne pepper
- 250 g of celeriac, cut into matchsticks
- 200 g of crab meat, white or mixed
- 10 chicory leaves
- 2 tbsp of crème fraîche
- 2 tsp of flat-leaf parsley, roughly chopped
Method
Step 1
Plunge the celeriac into ice-cold water as soon as it is cut and add half the lemon juice.Step 2
Meanwhile, mix together the mayonnaise, mustard and crème fraîche.Step 3
Season with salt, pepper and lemon juice.Step 4
Drain the celeriac and stir into the mustard mayo mix. Stir in the parsley and crab meat.Step 5
Serve the remoulade in chicory leaves, sprinkled with cayenne pepper.
