
Cranberry and Clementine Sour

Ingredients
- 300 g of cranberries
- 30 ml of vodka
- 20 ml of clementine juice
- 1 egg white, optional
- 100 g of caster sugar, with 200ml water
- 15 ml of cointreau
Method
Step 1
Make the cranberry puree - put 300g of cranberries, 200ml of water and 100g sugar in a saucepan and bring to the boil. Simmer for 2 minutes and allow to cool.Step 2
Use a hand blender and food processor to reduce to a puree. Strain through a fine sieve to remove the seeds.Step 3
Dry shake (without ice) all the ingredients and 30ml of the cranberry puree in a shaker to emulsify them.Step 4
Half fill the shaker with ice cubes and shake really hard for about 15 seconds. Strain into a rocks glass filled with ice cubes.
