Ingredients
- 350g spaghetti
- 1 tbsp butter
- 1 onion, diced
- 5 garlic cloves, crushed
- 250g silken tofu
- 100ml coconut milk
- 1 lemon, juiced
- 25g flat-leaf parsley, chopped
Method
Step 1
Cook the pasta in boiling salted water according to packet instructions. Drain and set aside.Step 2
Meanwhile, heat the butter in a large pan over medium heat until sizzling. Add the onion and garlic and cook for 5 mins, until fragrant. Remove from the heat and set aside.Step 3
Carefully drain the silken tofu and add to a blender or food processor along with the coconut milk, lemon juice, fried onion and garlic and a little salt and freshly ground pepper. Blend until smooth.Step 4
Pour the sauce into the pan used to fry the onion and garlic. Set over a low heat to warm through.Step 5
Tip in the pasta and stir to coat in the sauce, cook for 2 mins then stir in most of the chopped parsley.Step 6
Divide between serving bowls and sprinkle with the remaining parsley to serve.
