
Crisped Chickpeas with Wilted Spinach and Herbs

Fancy trying a new way with chickpeas? Frying them adds a wonderfully crispy texture. Serve with wilted garlic spinach and plenty of fresh herbs for a colourful and nutritious al fresco lunch. Or serve as a side to your main meal.Time and servings

Ingredients
- 2 cloves of garlic, crushed
- 1 handful of baby spinach
- 12 g of fresh chives
- 400 g of tinned chickpeas, rinsed and patted dry
- 2 tbsp of olive oil
- 12 g of fresh parsley
- 12 g of fresh coriander
Method
Step 1
Heat the oil in a frying pan on a medium heat. Tip in the chickpeas and mix in the garlic, then season with sea salt and black pepper.Step 2
Stir occasionally and after 10 mins the chickpeas should start to crisp and split a little.Step 3
Once crisp, lower the heat and stir in the herbs and spinach until wilted, then serve.
