
Crispy, Spicy Tofu Tacos with Black Beans and Avocado

Escape from taco hell with the help of these crispy, spicy tofu tacos with black beans and avocado. The spicy coating for the tofu won’t take long to make as it’s just four spices mixed with cornflour. While you’re preparing your tofu, you can cook the black beans, which are also pretty simple: fry garlic and cumin, before adding the beans and cooking for 10 minutes. Although this recipe is vegan – it even uses plant-based crème fraîche – you can swap in hake, cod or monkfish. It makes a great lunch or a light supper before heading out in the evening. Ingredients
- 280 g of firm tofu, for the tofu
- 2 tins of black beans
- 8 small of tortillas, to serve
- 1 avocado, thinly sliced, to serve
- 2 tbsp of cornflour, for the tofu
- 1 tbsp of oregano, for the tofu
- 1 drizzle of olive oil, for frying plus 1 tbsp for the black beans
- 60 g of red cabbage, shredded, to serve
- 1 drizzle of hot sauce, to serve
- 1 pot oatly crème fraîche, to serve
- 1 tsp of chilli powder, for the tofu
- 2 tsp of hot smoked paprika, for the tofu
- 0.5 tsp of garlic powder, for the tofu
- 3 cloves of garlic, grated
- 1 tsp of ground cumin
- 60 g of white cabbage, shredded, to serve
- 1 bunch of fresh coriander, to serve
Method
Step 1
Press the tofu between kitchen paper and a heavy pan weighted with tins for 15 mins, to press out any excess moisture.Step 2
Start the black beans: add the olive oil to a saucepan over a medium heat. Add the beans, garlic and cumin. Cook for 10 mins, stirring occasionally, until just starting to break down.Step 3
Mix the rest of the ingredients for the tofu (except the olive oil) in a shallow dish. Slice the tofu into lengths – like chips – about 1.5cm wide. Toss in the mixture in the dish until coated.Step 4
Heat some olive oil in a frying pan, add the tofu slices and cook for 2 mins each side until crispy all over. Remove onto kitchen paper.Step 5
Wipe the frying pan and heat the tortillas for 30 secs each side.Step 6
To assemble, spread a little of the black bean mixture on the base, add some shredded cabbage, a few pieces of spicy tofu, some avocado, ‘crème fraîche’ and coriander.Step 7
If you like it even spicier, add some extra hot sauce.
