Tomato Soup, this Crispy Basil Leaves, Basil Oil and Salsa Soup Topping combines
zingy lime with ripe sweet tomatoes and a hint of chilli. Chop everything
finely for just a touch of texture that works well with a smooth soup, and be
careful not to burn the basil leaves when frying, as they only take seconds to

Ingredients
- 5 tbsp of olive oil
- 18 medium basil leaves
- 3 tomatoes, diced
- 1 echalion shallot, finely diced
- 1 lime, juiced
- 1 jalapeño, finely diced (keep or discard the seeds, to taste)
Method
Step 1
Gently heat the olive oil in a small frying pan. Add the basil leaves (3 or 4 at a time – be careful, they’ll spit at first!) and cook gently for 30 secs, turning once, until crisp. Remove the leaves and drain on kitchen towel. Set the infused oil aside.Step 2
For the salsa, toss together the tomatoes, shallot, jalapeño and lime juice. Mix to combine.Step 3
Serve your soup with some of the salsa piled in the middle, then drizzle over a little of the basil oil and top with about 3 crispy basil leaves each.
