
Crispy Chicken Caesar with Brown Butter Radishes

This levelled-up Caesar salad from M&S is all about speedy shortcuts and bold flavours. Crispy chicken tenders and tossed with nutty brown butter radishes and salty anchovies, all coated in a creamy, ready-made dressing. A brilliant way to turn a classic salad into a laid-back lunch or indulgent sharing starter.

Ingredients
- 1 x 300g pack M&S Classic Breaded Chicken Tenders
- 35g salted butter
- 150g M&S speciality radishes, trimmed and halved
- ½ lemon, juice only
- 2 heads little gem lettuce
- 1 x 50g pack M&S Creamy Caesar Salad Dressing
- 1 x 50g tin M&S Collection Cantabrian Anchovy Fillets
- 30g parmesan, shaved
Method
Step 1
Heat the oven to 220°C/ 200°C fan/ gas 7. Arrange the chicken over a baking tray and cook for 20–25 mins until crisp. Alternatively, air fry at 180°C for 8 mins.Step 2
Meanwhile, heat the butter in a small pan for 3–5 mins, swirling occasionally, until it’s deep brown and smells nutty. Remove from the heat, stir in the radishes, half the lemon juice and set aside.Step 3
Separate the inner leaves of the lettuce, then cut the middle core into four wedges. Wash and pat dry.Step 4
Toss the lettuce leaves and wedges in the Caesar dressing and pile onto a large platter.Step 5
Slice the cooked chicken and arrange on top of the lettuce. Spoon over the buttery radishes, then top with the anchovy fillets.Step 6
Sprinkle over the parmesan, add a good grating of black pepper and finish with the remaining lemon juice to serve.
