Totally moreish and ready in minutes, Crispy Fried Okra is great as a side dish or served as nibbles with drinks – frying the okra is key, helping to break down the ‘gluey’ substance inside that makes it such a Marmite veg. For a Caribbean-inspired feast, mix and match with other dishes from food writer and photographer Riaz Phillips, such as Butternut Salad with Honey Dressing and Curry Chicken with Green Seasoning and Golden Rice. If you’re feeding a crowd, double the quantities.

Ingredients

  • 2 tbsp of vegetable oil
  • 240 g of okra, halved lengthways
  • 0.5 tsp of chilli flakes (optional)

Method

  • Step 1

    Heat the oil in a large frying pan over a medium heat and fry the okra for 5 mins, turning frequently until golden and crisp. Remove to a plate lined with kitchen towel to drain briefly.
  • Step 2

    Tip into a serving bowl and season with a pinch of sea salt and chilli flakes (if using). Serve immediately.
