
Crispy Kale Toast with Whipped Feta and Honey

Plus, it can be made vegan by simply using non-dairy cream cheese and vegan honey substitute.Time and servings

Ingredients
- 2 tbsp of runny honey
- 0.5 red chilli, sliced
- 1 garlic clove, sliced
- 30 g of feta
- 50 g of cream cheese
- 2 drizzles of of olive oil
- 80 g of kale, tough stalks removed
- 2 slices of sourdough bread
- 1 sprinkle of of sea salt
Method
Step 1
Set a small saucepan over a medium heat, add the honey, chilli and garlic and heat until starting to simmer; remove from the heat and set aside for the mixture to infuse. Discard the garlic.Step 2
Use a fork to mash the feta into the cream cheese (or whizz in a blender), then mix well with a spoon.Step 3
Heat a 1 drizzle of olive oil in a pan over a medium heat. When hot, fry the kale for 3-5 mins until slightly charred. Remove from the pan and set aside.Step 4
Drizzle both sides of the bread with oil; fry in the pan for 1 min each side until crisp and golden.Step 5
Spoon the cheese mix onto the toast, top with the kale and spoon over the chilli honey. Finish with a sprinkling of sea salt.
