Ingredients
- 500g new potatoes, halved if large
- 75g cornichons, roughly chopped
- 1 tbsp capers, finely chopped
- 3 salad onions, finely chopped
- 1 large handful flat-leaf parsley, roughly chopped
- 60g mayonnaise
- 125g Greek-style yoghurt
- 1 tbsp olive oil
- ¼ lemon, juiced
- 2 tsp Dijon mustard
- 2 heaped tbsp crispy onions
Method
Step 1
Boil the potatoes in salted water for 15-20 mins until tender. Drain and leave to cool slightly.Step 2
Mix the cornichons, capers, salad onions, parsley, mayonnaise, yoghurt, lemon juice and mustard in a large bowl and season to taste.Step 3
Add the warm potatoes and gently fold together, taking care not to break them up too much. Garnish with the crispy onions just before serving.
