Crispy Pepperoni Pizza Pasta

This pizza-inspired dish from MOB is the perfect dinner if you’re craving both pasta and pizza and don’t want to choose. The crispy pepperoni adds texture while the chopped tomatoes bring a hint of sweetness, all brought together with fresh herbs and cheesy deliciousness. Ingredients

  • 250 g of pepperoni
  • 3 shallots, finely chopped
  • 2 cloves of garlic, finely chopped
  • 800 g of tinned chopped tomatoes
  • 1 tsp of oregano
  • 400 g of spaghetti
  • 250 g of mozzarella, torn
  • 1 small bunch of basil, torn
  • 20 g of parmesan, to serve

Method

  • Step 1

    Add a big glug of oil to a frying pan and add in the pepperoni. Cook for 5 mins until very crispy. Set aside on a paper towel then roughly chop the crispy pepperoni.
  • Step 2

    Add in the shallots and cook for another 5 mins. Then add in the garlic and cook for 1 min until fragrant.
  • Step 3

    Add in the chopped tomatoes, oregano and half the crispy pepperoni and cook for 15 mins until thickened. Cook your spaghetti in salted boiling water.
  • Step 4

    When the sauce is thickened, add in the spaghetti with 150ml pasta water and toss together until the pasta is well coated.
  • Step 5

    Stir in the torn mozzarella and basil and mix until the cheese is slightly melted.
  • Step 6

    Serve with a sprinkling of parmesan cheese and enjoy.
