
Crispy Tofu Noodles

A quick veggie meal ready in 15 minutes. The savoury sauce is tossed through a crunchy stir fry mix to make this super quick with minimal effort. We’ve added crispy tofu to make it a great vegetarian meal ready in just 15 minutes.Time and servings

Ingredients
- 220 g of thai style stir fry mix
- 2 garlic cloves, sliced
- 1 small thumb of ginger
- 3 tbsp of oil
- 2 tbsp of light soy sauce
- 2 tbsp of runny honey
- 400 g of tofu, chopped into chunks
- 2 red chillies, chopped
- 300 g of udon thick noodles
- 1 handful of lime wedges, to serve
Method
Step 1
Heat the garlic and the ginger in a small pan with 1 tbsp of oil for 1-2 mins until starting to soften but not burn. Add to a bowl with the soy sauce and honey and whisk with a splash of boiling water until combined.Step 2
Heat a large pan to a medium heat and add 1 tbsp oil. Add the tofu and cook until golden all over, about 3-4 mins. Turn up the heat and add the remaining 1 tbsp of oil, chillies and stir-fry veg mix then cook for 4-5 mins or until starting to soften. Add the noodles and sauce to the pan and toss together. Cook for another 2 mins, then divide between bowls and serve with a wedge of lime for squeezing over.
