
Croissants with Wild Blueberries and Lime Cream Cheese

What could possibly compare to a freshly baked, golden croissant? How about one filled with citrusy cream cheese and wild blueberries bursting with sweetness? Picard has given us this delightfully easy brunch recipe using their frozen croissants. Ingredients
- 4 picard croissants with charentes butter
- 200 g of picard organic wild blueberries
- 3 tbsp of granulated sugar
- 120 g of cream cheese
- 1 lime, juiced and zested
Method
Step 1
Preheat the oven to 180°C/160°C fan/gas 4.Step 2
Place the croissants on a baking tray lined with baking paper and bake on the middle rack of the oven for 18 mins until golden and crisp.Step 3
Meanwhile, add the blueberries to a pan over medium heat and cook for two mins, then add 2 tbsp of the sugar. Continue cooking for 5 mins until the berry mixture becomes thick and jammy, then set aside.Step 4
In a mixing bowl, combine the cream cheese, remaining sugar and the lime zest and juice until well-combined.Step 5
Once the croissants are baked, cut each one nearly in half, leaving the top attached on one side, and spread each bottom half with some cream cheese. Add a generous spoonful of blueberries and fold the top half of each croissant over. Serve immediately.
