By Gran Luchito
Published on 07 April 2022
Tender slow cooked beef is the perfect pairing for crunchy Hard Shell Tacos. In our recipe we cook the beef slow and low in stock and our secret ingredient – Gran Luchito Chipotle Paste which gives the beef a delicious and smoky depth of flavour. Our favourite way to serve these tacos is topped with a crunchy slaw made with finely sliced veggies and a dollop of Chipotle Mayo.Looking for more taco recipes? Ingredients

  • 1 pack of braising beef
  • 2 tablespoons of olive oil
  • 2 white onions, diced
  • 5 cloves of garlic, minced
  • 2 bay leaves
  • 2 tsp of chipotle paste
  • 1 handful of fresh coriander
  • 500 ml of beef stock
  • 1 cup of apple cider vinegar
  • 1 pack of hard shell tacos
  • 2 limes, cut into wedges

Method

  • Step 1

Preheat the oven to 180°C. Heat a large, oven-proof saucepan with the olive oil .
  • Step 2

Meanwhile, dry the beef with a paper towel and generously season with salt & pepper.
  • Step 3

When the oil is very hot, add the beef and brown all over. Once ready, remove the beef from the pan.
  • Step 4

Reduce the heat to medium and add the onion, garlic, bay leaves and Gran Luchito Chipotle Paste as well as a good pinch of salt & pepper. Cook for about 6-10 minutes, stirring regularly.
  • Step 5

Return the beef and juices to the pan followed by the beef stock, apple cider vinegar and coriander. NB: Add more water halfway through the cooking time to avoid your meat from getting dry.
  • Step 6

Stir and place the pan covered with a lid or foil in the oven for 3 hours. When it’s ready the meat will be falling off the bone.
  • Step 7

Remove the beef and shred the meat. Mix the meat with the pan juices, taste and add more seasoning if necessary.
  • Step 8

Serve the shredded meat in the baked Hard Shell Tacos with lime wedges on the side.
