
Crunchy Ice Cream Sandwich

Ingredients
- 200 g of marshmallows
- 1 tub of ice cream, softened
- 45 g of butter
- 90 g of smooth peanut butter
- 120 g of kellogg's rice krispies
Method
Step 1
In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Stir in peanut butter.Step 2
Add Kellogg's Rice Krispies cereal. Stir until well coated.Step 3
Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 24 squares.Step 4
Top 12 of the cereal squares with ice cream. Place remaining squares on top to make delicious little sandwiches. Individually wrap in clingfilm. Store in airtight container in freezer for up to 6 weeks.
