A simple but flavoursome garnish,
this Crunchy Pancetta and Sourdough Croutons Soup Topping works particularly

Ingredients
- 12 slices pancetta
- 3 slices sourdough, cubed
Method
Step 1
In a large frying pan, fry the pancetta in batches over a medium heat for 1-2 mins each side, until crisp; stirring often. Remove the pancetta and drain on kitchen towel, then break the slices into rough pieces.Step 2
Add the sourdough to the fat in the frying pan and fry for 7-10 mins until golden all over, tossing fairly frequently.
