
Crunchy Seeded Salmon with Chinese Broccoli

Ingredients
- 1 egg
- 150 g of sesame seeds
- 1 tsp of sesame oil
- 40 g of plain flour
- 50 g of sunflower seeds, roughly chopped
- 25 g of breadcrumbs
- 4 cm of fresh ginger, peeled and grated
- 1 tbsp of sweet chilli sauce, (optional)
- 1 tsp of sunflower oil
- 4 salmon fillets, skinned and cut into chunks
- 2 tbsp of soy sauce
- 1 clove of garlic, crushed
- 2 tbsp of tomato ketchup
- 300 g of broccoli
Method
Step 1
Line a baking tray with parchment paper. Beat the egg with 1tsp of soy sauce. Mix the seeds and breadcrumbs together.Step 2
Dip the salmon pieces in the flour, followed by the egg, then roll in the seeds and crumbs before placing on the baking tray.Step 3
Divide the broccoli into florets and cut the stalk into matchsticks. Stir together the remaining soy sauce, along with the ketchup, chilli sauce (if using) and 1tbsp of water.Step 4
Cook the salmon in the preheated oven for 15 minutes. Heat the oils in a wok and then add the broccoli and stir fry for 3 minutes before adding the garlic and ginger.Step 5
Cook for a further 2-3 minutes before pouring over the soy sauce mixture. Stir fry for 3-4 minutes before serving with the salmon.
