Ingredients

  • 1 egg
  • 150 g of sesame seeds
  • 1 tsp of sesame oil
  • 40 g of plain flour
  • 50 g of sunflower seeds, roughly chopped
  • 25 g of breadcrumbs
  • 4 cm of fresh ginger, peeled and grated
  • 1 tbsp of sweet chilli sauce, (optional)
  • 1 tsp of sunflower oil
  • 4 salmon fillets, skinned and cut into chunks
  • 2 tbsp of soy sauce
  • 1 clove of garlic, crushed
  • 2 tbsp of tomato ketchup
  • 300 g of broccoli

Method

  • Step 1

Line a baking tray with parchment paper. Beat the egg with 1tsp of soy sauce. Mix the seeds and breadcrumbs together.
  • Step 2

Dip the salmon pieces in the flour, followed by the egg, then roll in the seeds and crumbs before placing on the baking tray.
  • Step 3

Divide the broccoli into florets and cut the stalk into matchsticks. Stir together the remaining soy sauce, along with the ketchup, chilli sauce (if using) and 1tbsp of water.
  • Step 4

Cook the salmon in the preheated oven for 15 minutes. Heat the oils in a wok and then add the broccoli and stir fry for 3 minutes before adding the garlic and ginger.
  • Step 5

Cook for a further 2-3 minutes before pouring over the soy sauce mixture. Stir fry for 3-4 minutes before serving with the salmon.
