
Crushed Garlic and Thyme Pan Potatoes

These potatoes are easy alternatives to traditional roasties – and are quicker to make, too. Crushing them slightly in a frying pan gives them a larger surface area and exposes some of the fluffy insides to the oil and heat, meaning they turn extra crispy on the outside. Finish with butter, garlic and thyme for extra flavour. Time and servings

Ingredients
- 3 garlic cloves, thinly sliced
- 1 large handful of thyme sprigs
- 750 g of baby potatoes
- 3 tbsp of olive oil
- 40 g of butter
Method
Step 1
Steam the potatoes whole for 15-18 mins, until tender.Step 2
Heat the oil in a large frying pan and add the potatoes. Squash gently with a potato masher, don’t worry if they break into pieces. Cook for 3 mins over a fairly high heat, then turn and cook for another 3 mins.Step 3
Add the butter, garlic and thyme and cook for another 1-2 mins, stirring to coat the potatoes in the butter and cook the garlic. The potatoes should be golden and crispy at the edges.
